Fully Cooked Boneless Prime Rib

Lou’s Fully-Cooked Boneless Prime Rib is slow roasted to rare and ready to heat and serve.
Consistently moist and tender. Lou’s Prime Rib provides a delicious and premium ‘centre-of-the-plate’ offering every time for a traditional prime rib entree, or thin sliced for a prime rib sandwich.

Preparation Guidelines

Preheat oven to 325 degrees F (178 degrees C).
Place meat on roasting rack over 1/2” water. Do not cover.
Heat to internal temperature of: 115 -120 F (46 - 48 degrees C) rare, 125-130 degrees F (51-54 degrees C) medium-rare,
135 -140 degrees F (57- 60 degrees C) medium, 145 -150 F (62 - 65 degrees C) medium well, and above 155 F (68 C) well done.
Remove from oven and allow to rest for 15 minutes.
Place in holding unit at 140 degrees F (60 degrees C) until time of serving.
For Prime Rib slices, preheat oven to 325 F (162 degrees C), place slices on tray and heat 4-5 minutes (medium-rare)
5-7 (medium) and 7-10 (well-done).

Safe Handling Instructions

• Keep frozen, in original package up to 180 days at -18 C (0 F)
• Thawed unopened refrigerated product can be stored for 10 days
• Thaw under refrigeration at 0 to 4 C (32 to 40 F)
• Any opened product must be used within 72 hours
• Do not refreeze product
• Keep refrigerated until ready for use
